Batata Poha (Aloo Poha)

Ingredients

2 cups thick poha

1 large potato (peeled and cut into very small cubes)

1 onion (finely chopped)
2 tbsp raw peanuts

½ tsp turmeric powder, salt to taste, 1 tsp lemon juice.

Tempering: 2 tbsp oil, 1 tsp mustard seeds, 2 green chillies.

Cooking Instructions
  1. Wash Bhau poha in a strainer and let it sit for 5-10 minutes to soften.
  2. Heat oil in a pan. Add peanuts, mustard seeds and green chillies.
  3. Add the potato cubes. Cover and cook on low heat until the potatoes are tender.
  4. Add onions and sauté until translucent. Stir in turmeric and salt.
  5. Add the softened Poha Toss gently for 2-3 minutes
  6. Turn off the heat. Add lemon juice, garnish with coriander.
    Tasty Batata Poha (Aloo Poha) is ready to serve.
